Pesto Cheese Toast with Poached Egg

This is the latest installment of my Powernap column. The series where I share quick, easy food that can be made for all kinds of situations. Powernaps are short and sweet, and so are these recipes. These are the things I make in a jiffy when I need a quick snack, am in the mood for a recipe experiment, or simply need to clean out the pantry.


Today’s Powernap: Dinner is in the fridge and the chores are done. What power lunch can I make and eat in ten minutes before I have to pick up my daughter from school?
We’ve all been in this position: everything around the house is nearly wrapped up and there is ten minutes to make and eat lunch before heading out to pick up the kids/commence errands/make phone calls/yada yada yada. My friends tell me they often make super fast sandwiches or scarf a handful of peanuts and wash them down with a swig of iced tea. But, I’ll be honest, I don’t really like doing that. I have never been a huge fan of cold cuts and rarely buy them, and I am partial to warm lunches when I am making them myself. So, what is my answer to the quick lunch conundrum? Eggs. Poached, fried or scrambled, give me an egg any day of the week.


Of course, an egg all on its own is a tad boring. I like to eat mine with toast or soft boiled with the top lopped off and lots of breadsticks for dipping in the creamy yolk. Most often I enjoy a nice slice of pesto cheese toast to serve as the eggs salty and savory “bed.” I swipe a nice piece of rustic bread with pesto, sprinkled on some Parmesan cheese and pop it in the toaster oven while I poach my egg. When I did this last week lunch was together in eight minutes and consumed in one. Then it was off the races with pick-up, dance class and the rest of the day.

Ingredients
1 egg
1 slice rustic country bread
2 teaspoons homemade pesto
1 large pinch coarsely grated Parmesan cheese

Directions
1. Spread the pesto on the slice of bread and top it with the Parmesan cheese. Pop the toast into the toaster oven or the real oven turned to 400ºF and toasted until the cheese is melted and lightly browned.
2. Meanwhile, poach the eggs in boiling water as you prefer to do it. I just carefully crack the egg into the boiling water and allow it to boil for about four minutes, or until the white is no longer transparent.
3. Slide the poached egg onto the pesto cheese toast and serve!

Naptime Notes:
A fried egg or scrambled egg would work just as well served on top of this cheese toast. Drizzle it with some high quality olive oil or white truffle oil and a crank of black pepper for stronger taste. This meal also serves as an excellent power breakfast or dinner when there is no time to naptime chef.

This is my powernap meal at least once a week pre-pick-up. Try it and I can almost guarantee it will become your’s too!
